An IPA stands for India Pale Ale. This is a type of beer that was developed by the English breweries in the seventeenth century. In the beginning, these breweries transported their normal Pale Ale to the English soldiers in India, but this beer did not survive that long journey. The journey sometimes took four to five months and that at warm temperatures. To avoid this problem, they brewed the Pale Ale with a larger dose of hops. Hops provide bitterness and aroma to the beer, but also act as a natural preservative to extend the shelf life of the beer. In addition, they also started to brew the beer more heavily, because alcohol also protects the beer. This new heavier version survived the long journey and this beer was then called India Pale Ale.
IPA has been back in the picture for 20 years because of the Craft Beer Revolution in America. It has even become the most popular specialty beer at the moment! Many variants of this style are now brewed such as:
- Black IPA: addition of dark malts
- White IPA: addition of herbs and wheat malt
- Session IPA: lighter version with alcohol between 3.5 – 5%
- Imperial IPA: strong version with alcohol between 7 - 20%
- New England IPA: cloudy and very aromatic version
- Brett IPA: IPA with the addition of Brettanomyces
